Make tostadas at home with a recipe from Guanajuato in Glencoe.

Summer is a perfect time for Mexican food. Steal a little south-of-the-border inspiration from Glencoe restaurant Guanajuato's, 73 Green Bay Rd., with tostadas for a simple but flavorful meal. Our favorite (and inexpensive) way to prepare the chicken for this recipe is to roast a whole chicken and shred as much as you need. The rest can be stored in the refridgerator and used for other meals. When you eat at Everest Burger and Bakery, Mark and Margarita Challenger want you to feel like you're sitting down to a family meal. Order a great American burger with fresh fries and buns, bring the kids, linger, and worry not about hormones, antibiotics or anything artificial. Mexican Spot Serves Up Heat In Glencoe

Guanajuato pairs lively atmosphere with fresh flavors

Since opening this summer, Guanajuato has added a little spice to Glencoe's dining lineup. Named for a state in the Mexican highlands where the restaurant's owner and executive chef were born, the spot's casual atmosphere and wide selection of Mexican dishes has been attracting big crowds. I called ahead before my first visit to Guanajuato and was told the restaurant doesn't take reservations but a party of two wouldn't have any problem finding space at 7 p.m. Friday. When we arrived, the place was packed with a mix of families, couples and groups in the 40-and-up set.
