Soon fans of Once Upon a Bagel's lox, soups, potato salad and namesake bagels won't have to travel to Highland Park or Northbrook to get their fix.
“We have people who come from Winnetka (to Highland Park) all the time that tell us that they’re waiting for the location to open so they can go there instead of coming all the way out here,” said owner Steve Geffen.
Geffen said increased demand from Chicago and throughout the North Shore had made him decide to expand more than a year ago, and that he thought that Winnetka would be a good place to do it. His third location is set to open Dec. 4.
“It’s got the same feel for us as Highland Park does," he said. "It’s a family type feeling. It’s a small community that’s pretty well knit and close.”
The location at 1050 Gage St. will seat between 50 and 60 people and employ staff members who have been working at Once Upon a Bagel's other locations for months.
“It’s basically going to be identical," Geffen said. "Same menu. Same atmosphere. Same staff. We’re just looking to recreate what’s worked for us.”
Local interest has been high throughout the new location's construction.
“We have people stop by there all the time and ask when we’re opening and what it’s about," Geffen said. "We do our best to fill them in and update them as we can.”
Once Upon a Bagel will be open from 6 a.m. to 8 p.m. Monday through Friday, 6 a.m. to 5:30 p.m. Saturday and 6 a.m. to 2 p.m. Sunday.
