BRADFORD PHILLIPS JOINS GUILDHALL RESTAURANT AS EXECUTIVE CHEF Phillips to add his fresh culinary inspiration to the European-inspired seasonal American menus

Glencoe’s popular Guildhall restaurant, 694 Vernon Ave., recently appointed Bradford Phillips as its new executive chef overseeing menu development and culinary operations.  

 

Phillips has played a significant role in Chicago’s evolving food scene. Phillips, a native of Michigan, is a graduate of Kendall College and Indiana University and has worked in fine dining kitchens both in California and Chicago.  Throughout his career, he has worked with notable homegrown chefs, such as Don Yamauchi, Rick Tramonto, Paul Kahan and Sandro Gamba, who have influenced his culinary style and instilled in him the paramount importance of quality and integrity in cooking.

Phillips’s interest in professional cooking came while he was studying at Indiana University where he worked in a small Italian restaurant as a server.  There, he began picking up shifts as a prep cook and soon discovered that he had a real love for the energy and atmosphere of the kitchen.

After earning his culinary degree, he interned at the Sonoma Mission Inn in California and met his mentor, Jeffrey Jake, who taught him about simplicity and purity of ingredients.  The experience in California also influenced his love of Mediterranean flavors – citrus, olives, herbs, artichokes and tomatoes will all find a home on the Guildhall menus.

 

Prior to joining Guildhall, Phillips was most recently the opening chef at Unite in Chicago, coming from a lengthy experience with LM Restaurants where he opened five of their French concepts.   Phillips’s formative experience in Chicago was as a sous chef first under Paul Kahan at Blackbird and then at Nomi under Sandro Gamba.            

 

Guildhall is open for Sunday brunch from 10 am to 2 pm and dinner Sundays from 4 pm to 9 pm, Mondays through Thursdays from 5 pm to 10 pm, and Fridays and Saturdays from 5 pm to 11 pm.  New sidewalk seating recently opened. All major credit cards are accepted.
